Oysters are fresh and plump, amazing with the crispy egg batter

The best oyster omelette we found in Penang so far.  You can see from the picture on the amount of oysters on the plate.  Seems like it is pretty popular with tourist and locals alike as we waited for more than one hour!  It was a little greasy as oyster omelette is cooked differently from other hawkers, more like fried oyster pancake.  I was rather put off seeing the amount of oil used initially, but was immediately wow by the crispy texture of the egg batter, oysters were fresh and nicely cooked to ensure it is still moist and plump.  The dipping sauce goes so well with it that I had to ask for more.

I also tried Kway Teow noodles soup (Rice noodles) from another stall during the agonizing wait. Comfort food, it has that old school taste, generous in ingredients.  Lots of minced pork that sweeten the broth, I like it when they added pork liver.  Will be back for more if wait isn't that long.

That explains the wait.. Takes about 20 minutes or more for a batch.  I saw the hawker patiently flipping the batter to have the flour cooked throughly and then pan fried to get that crisp at the edges.

Oysters are added at the end so that they are lightly cooked
